What Are Lobsters?

Lobsters are crustaceans from the Nephropidae family. They have long bodies, muscular tails, and large claws. Found primarily in the cold waters of the Atlantic and Pacific Oceans, lobsters are considered a delicacy worldwide. They are often associated with fine dining but have also become more accessible to home cooks in recent years.

How to Cook Lobster

Cooking lobster may seem intimidating, but with the proper steps, it’s straightforward:

Boiling

The most traditional method. Simply bring salted water to a rolling boil, add the whole lobster, and cook for 8–12 minutes, or until the shell turns a bright red color.

Steaming

Preserves more flavor and tenderness. Place the lobster on a steaming rack above boiling water, cover, and steam until done.

Grilling

Perfect for smoky, charred flavor. Cut the lobster in half and brush it with either olive oil, avocado oil, or butter, and place it on the grill, shell-side down.

Baking/Broiling

Often used for lobster tails. Brush with butter, season with garlic and herbs, and cook in the oven until opaque and slightly browned.

Types of Lobster

Several types of lobster are enjoyed around the world, each with unique characteristics. We favor the following types:
• Canadian Lobster - Our Canadian Lobster Meat is wild-caught in the cold waters of Canada, cooked from a live state. Simply thaw it and add it to your favorite lobster recipe.
• Australian Lobster Tails - Lobster Tails so big, your taste buds won’t believe it. Caught off the northern coast of Australia, these tails are twice the size of Maine lobster tails and are packed with mild, sweet, succulent meat.
• Norway Lobster - Also known as Langoustines, these decadent crustaceans have a sweet, delicate flavor.
