A Shrimp Scampi dish made for both you and your kids.
Ingredients:
- 2 lbs Peeled & Deveined, Tail-Off Gulf Shrimp
- 3 cloves garlic, minced
- 3 tablespoons butter
- 1/4 cup chicken broth
- 2 tablespoons fresh lemon juice
- Salt and pepper to taste
- 1/4 cup chopped fresh parsley
- 2 (16 oz) packages linguine Pasta
Instructions
- Bring a large pot of salted water to a boil; cook linguine in boiling water until nearly tender, 6 to 8 minutes. Drain.
- In a skillet, melt your butter over medium heat.
- Add the minced garlic and sauté for about 1 minute.
- Add the shrimp to the skillet and cook for 2-3 minutes or until pink.
- Pour in your chicken broth and lemon juice, then season with salt and pepper.
- Cook for another 2-3 minutes, until the shrimp are fully cooked (internal temperature of 120°F).
- Add your linguine to the skillet, sprinkle with chopped parsley, and toss all ingredients together.
- Plate and enjoy!
